Simple Recipes for the Fall - September 28, 2017

Nothing beats a warm fall meal after a long day, and that doesn't mean you have to stop at a roadside restaurant. These cozy fall recipes are easy to cook after a long day of admiring the fall colors or enjoying the day out with your family.

2X4 Soup

This tasty soup recipe is easy to memorize for a quick lunch or dinner.

What You'll Need:

  • 2 pounds hamburger
  • 2 cans diced tomatoes and green chiles
  • 2 cans ranch-style beans
  • 2 cans minestrone soup

Cooking Instructions:

  1. Warm a large sauce pan over medium-high heat and brown the hamburger, then drain.
  2. Add the can of tomatoes and green chiles to the pot, then add the minestrone soup and the ranch-style beans.
  3. Simmer the entire combination until it is hot, then serve in four bowls.
  4. Add cheese, crackers, bread or other toppings as desired.

Creamy Salsa Chicken

Pull out your crock pot and let this warm meal cook while you're out enjoying the fall colors.

What you'll need:

  • 5 thawed boneless and skinless chicken breasts
  • 16 ounces salsa
  • 1 cup shredded cheddar cheese
  • 1 can corn (drained)
  • 8 ounces cream cheese (softened)
  • 1 can black beans (drained)
  • 1/2 cup green onions (chopped)

Cooking Instructions:

  1. Bake the chicken in a crock pot for 3.5 hours on high heat, then drain the juices.
  2. In a bowl on the side, stir the cream cheese and salsa together.
  3. Pour the salsa and cheese mixture over the chicken, then stir in the black beans and corn.
  4. Let the entire combination cook for another half hour on high.
  5. Sprinkle the cheddar cheese and let it melt on top for 10 minutes before you plan to serve the meal.
  6. Serve with chopped green onions and additional sour cream and salsa if desired.
