Prep These Lunches for Back to School - September 7, 2017

School is back in session and that means that you're going to have to come up with some tasty and healthy lunches for your kids. It's not just enough to be tasty and healthy, though. You'll want some recipes up your sleeve that are also quick and easy to make. These three recipes will quickly find themselves as your go-to lunches when you need to pack something for your kid's lunch.

Pepperoni Panzanella


  • 1 1-inch thick slice crusty bread, cut into 3/4 inch pieces
  • 1 large tomato, cut into 1/2 inch wedges
  • 4 ounces fresh mozzarella, cut into 3/4 inch pieces
  • 2 ounces sliced pepperoni, halved if large
  • 1/2cup fresh basil leaves, torn if large
  • 1/4 cup chopped drained mild Peppadew peppers in brine or roasted red peppers
  • 1/4 cup fresh parsley leaves
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Kosher salt, freshly ground pepper


Preheat oven to 350º. Place bread on a rimmed baking sheet and toast until dry and beginning to turn golden, 10–12 minutes. Transfer bread to a large bowl and add tomato, mozzarella, pepperoni, basil, Peppadew peppers, parsley, oil, and vinegar. Toss to combine and season with salt and pepper. Bread will soften as it absorbs tomato juices, oil, and vinegar.

Classic Tuna Salad


  • 2 celery stalks, finely chopped
  • 1/4 small red onion, finely chopped
  • 1 5-ounce can water-packed tuna, drained
  • 1/4 cup mayonnaise
  • 2 tablespoons capers, drained, finely chopped
  • 2 tablespoons coarsely chopped fresh parsley
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice, plus more if needed
  • Kosher salt, freshly ground pepper


Using a fork, mix celery, onion, tuna, mayonnaise, capers, parsley, mustard, and 1 Tbsp. lemon juice in a medium bowl, breaking up any large pieces of tuna, until well combined. Season with salt, pepper, and more lemon juice, if desired.

Rice and Beef Jerky Bowl


  • 1/2 shallot, thinly sliced into rings
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons olive oil
  • Kosher salt, freshly ground pepper
  • Cooked brown or red rice, beef jerky, cooked greens (such as kale), sliced radishes, chopped, toasted almonds, parsley leaves, and tarragon leaves (for serving)


Whisk shallot, vinegar, and oil in a small bowl; season with salt and pepper. Cover and chill until ready to use.

Place rice in a medium bowl. Arrange jerky, greens, and radish over rice. Drizzle with vinaigrette. Top with shallots, almonds, parsley, and tarragon.
